THE CHEFS
The Moulin de la Coudre restaurant is a four-handed operation. Jean-Pierre Vaury, founding father of the Moulin, has been working with his chef Hugues Barillet for 15 years. Having fallen into the cooking world at an early age, Jean-Pierre went on to study at the Reims hotel management school at the age of 14, worked in the kitchen at the Saint-Michel Abbey in Tonnerre and held a position as head chef in England, where he met his wife Marie-Cécile. Together, back in the Yonne, they took over the management of l'Arche Avallon. Meanwhile, Hugues, a qualified chef with a pastry speciality, worked at the Hostellerie des Clos in Chablis.
Today, they both put their passion and talent at the service of a cuisine they love: gourmet, lively and colourful. They revisit the traditional way of cooking with precision and rigour to satisfy their never-ending quest for new sensations.
